Flank steak
Italian salad dressing, purchased or homemade
|
Secure the meat in a high-sided pan. Wrap the meat with a single sheet
of clear plastic wrap. Fill bellows with salad dressing. Using the large
needle, inject beef in several places along the sides of the meat, with
the grain. Marinate in the refrigerator for at least 30 minutes. Remove
the plastic wrap. Grill until done to your liking. Slice on the diagonal
to serve.
May be served on salad greens for a quick meal or with potato and vegetables
for a more hearty meal.
Hint: You may inject the meat, wrap it in freezer paper, and freeze for
later use. The marinade really tenderizes the meat this way. It is delicious
and easy to do ahead of time.
