| Grilled Garlic & Ginger Chicken |

1 chicken roaster cut up or favorite chicken parts
2 Tablespoons butter, melted
2 Tablespoons olive oil, garlic flavored, or other flavor
1 Tablespoon finely minced garlic
1 Tablespoon finely grated fresh ginger root, peeled
2 green onions or scallions, very finely minced
Salt and pepper, to taste
Garnish: scallions cut into 6 inch lengths

| Preheat the grill to medium. Wash and clean the chicken. Dry with
paper toweling. In an 8-ounce glass-measuring cup, melt the butter
in the microwave. Whisk in the oil, garlic, ginger, scallions and
seasonings. Pour the marinade into a Flavor Express® bellows.
Attach the large needle and inject the chicken, placing the most marinade
in the breasts. Refrigerate for 30 minutes. Place the chicken on the
grill. Reduce the drippings by half by boiling. Grill turning once,
until no longer pink (9 - 11 minutes). Brush with the boiled and cooled
drippings for additional flavoring and color. Garnish with the prepared
scallions. |
