1/2 cup Calvados brandy or applejack
juice of 1 fresh lime
1/2 tsp dried dill weed
¼ tsp. freshly ground pepper
¼ tsp. ground nutmeg
2 (4 inch wide slices) fresh salmon fillets

| Shake brandy, juice, pepper and nutmeg in a bellows. Attach small
needle to bellows.Place salmon fillets into a shallow dish. Inject
salmon with the Calvados mixture and allow to marinate about 20 minutes.While
salmon is marinating, preheat grill. When hot, grill salmon until
done. Baste with additional marinate, if desired. Delicious served
with steamed vegetables and hot rice. Garnish with lime slices and
toasted pecan pieces. This makes a quick, nutritious meal. |
