Golden Harvest Mushrooms

Serves: 6
Ingredients:

12 gourmet stuffing mushrooms
1 medium potato
1 medium yam
1/2 cup of milk
freshly ground white pepper
salt
1/4 cup of grated mozzarella
2 teaspoons breadcrumbs.


Instructions:

Pre-heat oven to 325º F

Wash and peel both the yam and the potato thoroughly. Bring water 1 quart of water to boil in a pot.
Add sliced yam and potato. Boil until tender, drain. Mash potato and yam, and add the milk, and white pepper and salt to taste.

Wash and peel mushrooms, removing all stalks. Place mushrooms on a baking sheet. Load the Flavor Express® bellows with the potato/yam mixture. Carefully fill each mushroom cavity with the potato/yam mixture.

Sprinkle breadcrumbs and mozzarella on top of each mushroom, and bake in oven for 12-15 minutes.

Serve immediately.

* Makes an excellent party appetizer
* Mushroom caps and be stuffed in advance, and kept in refrigerator until ready to bake.
