Ingredients:
Phyllo cups, prepared per package directions
Chicken salad, tuna salad, egg salad, ham salad (recipes to follow)
Instructions:
Be sure the salad has only fine pieces. Fill bellows with one type of
salad. Using the large needle, fill cups. Refrigerate. Serve chilled and
garnished with fresh herbs.
Chicken Salad
1 cup Cooked chicken, finely minced
3 Tablespoons mayonnaise, enough for a very spreadable consistency
Celery seed to taste
Salt and pepper to taste
Tuna Salad
1 can white tuna, drained and broken into fine pieces with fork
1 teaspoon of lemon juice
3 Tablespoons mayonnaise, enough for a very spreadable consistency
Onion powder, pepper to taste
Egg Salad
6 hard boiled eggs, peeled and finely chopped
1/2 teaspoon yellow prepared mustard
Mayonnaise, enough for a very spreadable consistency
Salt and pepper to taste
Hint: a bit of curry powder may be added for an extra zing.
Ham Salad
Cooked ham, ground to a fine consistency
Pickle relish
Mayonnaise, enough for a very spreadable consistency
