| Citrus Baked Buttermilk Chicken Breasts |

4 boneless chicken breast halves, skinned
½ cup flour
1 Tablespoon paprika
1 cup buttermilk
2 Tablespoons orange juice
1 Tablespoon lemon juice, freshly squeezed
1 Tablespoon olive oil
½ cup chicken broth, homemade is best

| Wash and prepare the boneless chicken breasts. Wrap in clear plastic
wrap. Mix the flour and paprika together in a plastic bag. Set aside.
Combine the buttermilk, orange juice, lemon juice, olive oil and broth
together. Season with salt and pepper as desired. Fill a Flavor Express®
bellows with this marinade. Using the large needle, inject the chicken.
Refrigerate for 30 minutes. Remove the chicken from the refrigerator.
Drain slightly. Place the chicken breasts in the plastic bag containing
the flour mixture. Shake. Place the chicken in a pan sprayed with
vegetable spray. Bake in a 350 degree oven for 30 to 40 minutes or
until cooked. Turn once. Garnish with thin fresh orange slices twists.

Use low fat buttermilk. The dairy buttermilk works beautifully to
tenderize the chicken.
