Flavor Express®Carribean Chicken
Flavor Express®

Serves: 2-4
Ingredients:

2 boneless, skinless chicken breasts
3 cloves of finely minced garlic
2 tablespoons brown sugar
4 tablespoons dark, spiced rum
3 tablespoons lime juice
2 tablespoons reduced sodium soy sauce
1 tablespoon olive oil
1 tablespoon thyme
1/8 teaspoon pepper
1 tablespoon minced fresh parsley

Directions:
Combine minced garlic and the next 8 ingredients in a bowl and mix. Wash chicken thoroughly removing any excess skin and fat, then pat dry with paper towels. Place chicken in a resealable plastic bag and inject with the Flavor Express® from the bag's opening using the large needle. Seal bag and refrigerate for 30 minutes, turning once at 15 minutes. Save remaining marinade. Cook chicken in a covered frying pan with a dash of oil on medium high for approximately 20 minutes along with remaining marinade. (Time varies depending on the thickness of the chicken breasts.) Garnish with fresh parsley and serve with wild rice and choice of vegetables.
Hints:

Try saving the marinade until the last 10 minutes of cooking time. This will prevent you from steaming the chicken if you have the heat closer to high. (But make sure you thoroughly cook the marinade)
