Bourbon Pork with Onions

Serves: 4
Ingredients:

4 Center cut pork chops about 1" thick
1/2 C bourbon
2 cloves garlic, minced finely
3 T olive oil, divided
1/8 tsp red pepper flakes(optional)
1/4 tsp dried thyme, divided
1 large onion, thinly sliced
salt and pepper to taste

Directions:
Combine bourbon, garlic, 2 T oil, pepper flakes and thyme in the Flavor Express bellows. Using the large needle, inject the mixture into each chop. Allow to marinate at least 30 minutes in a large bowl. Reserve any leftover marinade and drippings. Heat 1T oil in a saute pan. Saute the chops until golden brown. Season with salt and pepper. Turn to color other side and season as before. Remove from the pan and set aside on a warm platter. In the same pan, saute the onions until richly brown, stirring frequently to loosen any bits from the pork still remaining in the pan. Add the reserved marinade and drippings. Bring to a boil. Add the chops. Spoon the onions and juice over the chops. Cover and reduce the heat. Simmer 20 minutes or until the chops are no longer pink in the center. Garnish with springs of mint and/or fresh thyme.

Hints:

The pepper flakes add a bit of heat to the chops. You may wish to combine rosemary with the thyme and eliminate the pepper flakes. Delicious with garlic mashed pototoes and a green vegetable.
