Flavor Express® Barbecued Pork Ribs

Mabel: CT, USA
Serves: 6 - 8

Ingredients:

3 to 4 pounds country style pork ribs
1 cup yellow prepared mustard
1 cup cider vinegar
¼ cup catsup
¼ cup honey or molasses
Worcestershire and/or Tabasco sauce

Directions:

Combine the mustard, vinegar, catsup, and molasses in a saucepan. Bring to a boil. Add the Worcestershire and Tabasco sauces to taste. Cook over medium heat, stirring occasionally until thick about 30 minutes. Cool. Preheat the oven for 375 degrees or preheat the grill. Prepare the pork ribs for injection. Remove excess fat. Place in a large microwave proof dish. Fill two Flavor Express® bellows with the barbecue sauce. Affix the large needle. Inject the sauce into the ribs, filling to capacity. Cover with microwave proof plastic wrap and place in the microwave. Partially cook the ribs, turning them every 3 or 4 minutes for even cooking. Complete cooking the ribs in the oven or on the grill. Baste, if desired, with clean, uncontaminated sauce. The Flavor Express® unit can be used to place the sauce on the cooking ribs. Squeeze the unit handle very gently and run the sauce evenly on the top of the ribs. The needle is made of a strong polycarbonate material but will NOT withstand the direct heat of the grill. Use a grilling brush if unsure.

Hint:

The Cue sauce works very nicely on chicken wings. Use the smaller needle for injection. Also, it is not necessary to precook the wings. They are small enough to cook crisply on their own.
