2 cups flour
1 ½ teaspoons baking powder
½ teaspoon salt
3 to 4 Tablespoons almond paste
½ cup sugar
¼ cup butter, room temperature
1 egg
raspberry jelly
oil, for frying
Whipped cream, flavored if desired, for garnishing
Fresh raspberries, for garnishing

| In a medium bowl, combine the flour, baking powder and salt. Stir
to blend. In the bowl of the mixer, combine the almond paste and sugar.
Mix on low to combine. Add the butter, beat at medium for about 3
minutes or until fluffy. Add the egg. Beat. Add the vanilla and milk.
Beat on low until just blended. Stir in the flour mixture. Cover with
a cloth. And set aside for about 20 minutes. Meanwhile, fill bellows
with raspberry jelly and prepare unit for injection. Set aside. Heat
oil in a deep fryer or fry pan to about 375 degrees or until a drop
of donut will sizzle and float. For accuracy, use a thermometer. Using
a teaspoon measure, scoop up a rounded amount of batter. Using your
hands, form a ball with the dough and flatten slightly. When a few
have been formed, fry for 2 or 3 minutes in the hot oil until golden.
Drain on paper toweling. When cool enough to handle, inject each donut
using the prepared Flavor Express® marinator/flavorizor. Serve warm
along side a dollop of flavored whipped cream. Scatter fresh raspberries
on the plate. Sprinkle with confectioners' sugar. |
