Q. Are there any tips for filling a bellows?
A. The new Flavor Express®
2 allows for self-filling. Simply squeeze the
handle, place the needle in the mixture, then release
the handle pressure. The mixture will be drawn into
the bellows.

Pour
directly from the bottle (for prepared marinades, dressings,
etc.) Alternatively, make
a funnel from an empty plastic liter bottle. Test to
see that the mouth fits the bellows opening. Carefully
cut a funnel with a sharp knife or scissors. Don't cut
yourself. Save the funnel for repeated usage.
Another easy tip for filling a bellows is support
a plastic sandwich bag over a small jar or glass. Fill
the bag. Remove the bag while squeezing the opening
closed. Make a small diagonal cut in one corner of the
bag and squeeze the contents into the bellows.

Q. How do I know which needle to use?
A. Use the large needle with thicker marinades and
those with chunks of herbs or spices: For example, use
the large needle when injecting a white wine and
fresh chopped rosemary marinade into chicken, hummus into
a hollowed cucumber, or whipped cream into strawberries.
Use the smaller needle for thinner marinades or
thinner food such as bottled teriyaki sauce into large
shrimp, orange juice and orange liqueur into a pork chop,
or barbecue sauce into chicken wings. |

Q. Do I have to use the new Flavor Express®
2 with just marinades?
A. No. Use the unit for filling foods like cream puffs
with a rich custard pudding, a tofu mixture into a hollowed
cherry tomato, or use the unit to prepare deviled eggs.
The smaller needle can be angled for greater control in
decorating foods such as expressing a ribbon of frosting
around the edge of a cookie (acting as a dam to keep the
frosting from dripping over the sides). Mashed or whipped
potatoes expressed through the large needle adds a nice
touch to a casserole. |

Q. How should I clean the bellows?
A. We've made the bellows so inexpensive that you
really don't have to. (See our order
page) However, if you wish to reuse the bellows, a
bottle brush works beautifully. Swish it with soapy water
immediately after use. Another way is to line it with
a thin fold-over top sandwich bag. The thin plastic bag
won't interfere with screwing on the cap or loading the
bellows into the unit, though it may decrease the capacity
of the bellows somewhat. After use, simply throw the bag
out.

Q. Do I need more bellows?
A. You may find that additional bellows are useful.
You may prefer to separate bellows used for marinades
with strong odors from bellows used for desserts. Some
people prefer to dispose of them after use instead of
cleaning them so we've priced them accordingly. (See our

Q. Can I adapt my favorite recipes for use with the
new Flavor Express® 2?
A. These are the best recipes to use because you already
know them. Injecting instead of marinating by soaking,
allows you to control how much and how deep the resulting
flavor will be. You may have to use a blender to break
larger pieces into a size that will fit the needle you
wish to use, or adapt the ingredients, i.e. substitute
ground ginger for a ginger strip, or lemon zest for a
lemon peel. Be creative and experiment. Cooking should
be just as much fun as eating! |

A. Yes, the bellows and needles can be used with both the
original Flavor Express® and the new Flavor
